ABOUT Spicy Capsicum Curry RECIPE

Spicy capsicum curry pairs perfectly with both rice and roti.

Ingredients Serving: 3

  1. Capsicum - 2
  2. Onion - 2,medium
  3. Tomato 1 big
  4. Salt to taste
  5. Turmeric powder pinch
  6. Cumin powder - 1/2 tbsp
  7. Coriander powder - 1/2 tbsp
  8. Red chilli powder - 1 tbsp
  9. Garam masala - 1/4 tbsp
  10. Green chilli - 1 or 2
  11. Coriander leaves - a bunch
  12. Mint leaves (optional)
  13. Ginger garlic paste - 1/2 tbsp

Instructions

  1. In a pan add 2 tablespoons of oil, saute onions. Once the onions become translucent, add salt and ginger garlic paste, green chilies. Fry till onions become golden brown.
  2. Add turmeric, chilli powder, coriander powder, cumin powder, garam masala and saute it for a minute. Add chopped tomatoes and cook with lid covered in low to medium flame till the tomatoes go mushy
  3. Add cubed capsicum and fry till the capsicum become slightly tender. Add little water (approx half a cup), mint leaves and cook till the gravy becomes thick enough.
  4. Turn off the gas and garnish with coriander leaves. Serve hot with rice or roti.
