ABOUT Dahi Baigan RECIPE

My brother Freddie showed me this recipe and this is simply the improvised version of it.

Ingredients Serving: 3

  1. 10 Baby Brinjals
  2. 1 tsp Turmeric powder
  3. 2 tsp Red chili powder
  4. 1 tsp Garam masala
  5. 1 tsp Goda Masala
  6. Dessicated coconut
  7. 3 medium Onions, chopped
  8. 1 tsp Cumin seeds
  9. 1 tsp Mustard seeds
  10. 4-6 Curry leaves
  11. 1 tbsp Ginger garlic & green chili paste
  12. Dahi (yogurt) 3/4 cup
  13. Salt to taste
  14. 1/2 tsp Sugar
  15. Fresh chopped coriander
  16. Oil as per need
  17. Crushed groundnuts

Instructions

  1. Take 8-10 baby brinjals and cut into small pieces.
  2. Soak them in water with a little salt and turmeric. Keep them aside for 30 minutes.
  3. Heat oil in pan. Fry the chopped onions till dark brown, remove and keep aside.
  4. Add cumin, mustard seeds, curry leaves and let them crackle in the remaining oil in the pan.
  5. Add a paste of ginger, garlic and green chilly and saute.
  6. Add the brinjals pieces, mix well and saute.
  7. Add turmeric, chilli powder, Goda masala and Garam masala, saute for a few minutes.
  8. Add desiccated coconut and sprinkle crushed fried onions.
  9. Mix and add salt with 1/2 tsp sugar and 3/4 cup dahi (plain yogurt).
  10. Simmer on a low flame with closed lid and cook till brinjals are soft.
  11. Keep checking for the colour and consistency of the brinjal so that they are not overcooked.
  12. Garnish with chopped coriander, crushed groundnuts and serve hot.
