ABOUT Dahi baingan RECIPE

Dahi baingan is one of the famous North Indian dish. Combination of brinjal and yogurt with spices gives a unique taste and goes well with some phulka or roti.

Ingredients Serving: 3

  1. Brinjals 4 to 5
  2. one cup curd
  3. 2 tbsp besan
  4. 2 tsp coriander powder
  5. 2 tsp red chilli powder
  6. 2 tsp garam masala powder
  7. 1 tsp fennel powder
  8. pinch of turmeric
  9. salt for taste
  10. 2 to 3 dry red chillies
  11. 2 tbsp sesame seeds
  12. tsp of cumin and mustard seeds
  13. 1/2 tsp of split black gram
  14. 2 cloves
  15. 2 cardamom
  16. bay leaf
  17. cinnamon
  18. Finely sliced onion
  19. one or 2 sliced tomatoes
  20. curry leaves
  21. ginger garlic paste

Instructions

  1. Before starting the procedure slice brinjal into small squares and fry in oil until they turn brown in colour
  2. Take a cup of curd and add 2 tbsp besan(chick pea flour) and mix properly so that their are no lumps
  3. Add spices 2 tsp coriander powder, 2 tsp red chilli powder, 1 tsp fennel powder, 2 tsp garam masala, pinch of turmeric to curd besan mixture and mix well.
  4. Take a pan and dry roast 2 tbsp sesame seeds and dry red chillies. Blend them in blender to create a powder
  5. Now take little oil in a vessel and add cumin, split black gram. When color changes add curry leaves, ginger garlic paste and fry for few secs.
  6. Add finely sliced onions and fry until they change little brown color.
  7. Add sliced tomatoes and cook until they become mushy
  8. Now add curd besan spice mixture and mix well.
  9. Add fried brinjal pieces and cook for some time with lid closed on low flame.
  10. Finally add salt and garnish with coriander or some spring onions
  11. serve hot with roti or phulka.
