Varan is a Maharashtrian preparation of split pigeon peas lentil ( Tuvar dal ) curry. This Satvik Varan served with steamed rice along with a slice of lemon is a homely food as well as great comfort. Gode Varan is a thick consistency Varan with coconut paste.
Wash toor dal and cook with water and chilies in a pressure cooker.
Gather coconut, turmeric powder, onion, cumin seeds, turmeric powder, coriander leaves. Add water and grind to a smooth fine paste. there should be no small chunks or pieces of coconut in the paste. keep the ground paste aside
Heat oil in a pan or pot. add mustard seeds and crackle them.
Then add curry leaves and asafoetida.
Pour cooked Toor dal and ground paste.
Add a little water. The consistency of Varan should be thick. Add salt. Stir and cook on a medium flame.
Dont allow it to boil. When it comes to boil, make the gas on simmer and let it cook on simmer for 2 minutes.
Switch off the gas and serve hot.
