This is a very traditional recipe of northern India mainly U.P.

Ingredients Serving: 6

  1. Skinned split green gram lentil (Dhuli mung dal) - 1 cup
  2. Cooking soda - 1 pinch
  3. Tomatoes - 4 (grated & remove their skin)
  4. Onions - 2 (peeled & grated)
  5. Ginger - 1'inch piece (grated)
  6. Garlic- 5 cloves (peeled and crushed)
  7. Green chillies - 2 (finely chopped)
  8. Bay leaf - 2
  9. Black peppercorns - 6
  10. Cloves- 4
  11. Asafoetida - 1 pinch
  12. Turmeric powder - 1/2 tsp
  13. Corinder powder- 1 tsp
  14. Mirch powder or Kashmiri chilli powder - 1/2 tsp
  15. Garam masala- 1/2 tsp
  16. Salt to taste
  17. Water - 2 cups
  18. Coriander Leaves (for Garnishing)

Instructions

  1. Wash mung dal thoroughly & soak in water for 5-6 hours.Rinse and grind it coarsely. The batter should be in thick consistency.
  2. Keep the batter for fermenting for at least 1 hour.
  3. Then, add a little salt & soda to the batter and mix it for next 10-15 mins.
  4. Drop a little batter in a cup full of water. if it floats then the batter is ready for frying and if the batter gets dissolved in water then whisk it for some more time.
  5. Heat oil in a pan.
  6. Drop balls of batter into hot oil and fry it.
  7. Deep fry all the batter in balls shaped.
  8. Drain all the badis on a napkin paper so that extra oil gets removed from them.
  9. Now take another pan and heat oil.
  10. Then add cumin seeds.
  11. After it crackles, add bay leaf, cloves, black peppercorns, asafoetida, let it splutter for few seconds.
  12. Add grated onions. Roast it till it becomes little brown in colour and the raw smell of onions gets disappeared.
  13. Next, add tomatoes, ginger, garlic, green chilies, turmeric powder, coriander powder and mirch powder.
  14. Roast this masala till the oil separates from it and the masala leaves the sides of the pan.
  15. Now add water.
  16. When the water gets heated, add the fried lentil dumplings into it.
  17. Cook for 5 more mins so that the dumpling gets mixed with masala properly .
  18. Turn off the gas.
  19. You can add 1/2 to 1tsp of cream for garnishing as well but I have not used it.
  20. Garnish with garam masala, green coriander leaves and a tomato flower.
  21. Enjoy!!!
