ABOUT Sugiyan RECIPE

Sugiyan is a tea time snack from Kerala. Its very easy to prepare and taste really good.

Ingredients Serving: 5

  1. 1 cup (200gms) whole green moong dal
  2. 100 ml water
  3. 2 tbsp ghee
  4. 1/4 cup grated coconut
  5. 1/2 cup grated jaggery
  6. 1/4 tsp cardamom powder
  7. 1/2 cup all purpose flour
  8. A pinch of salt
  9. Water as needed to make slurry
  10. Oil for deep frying

Instructions

  1. Wash and clean whole green moong dal and pressure cook till it's cooked but yet firm.
  2. Now add jaggery to the cooked green moong dal and cook till it starts to leave the pan.
  3. Next add coconut, ghee and cardamom powder.
  4. Let the mixture cool and make small balls out of it.
  5. Make thick slurry by mixing maida, water and salt.
  6. Dip the balls in slurry and deep fry till light golden brown.
  7. Serve hot with tea or coffee.
