Ingredients Serving: 4

  1. 4 small size brinjals.
  2. 1 cup yogurt
  3. 1 tsp mustard seeds.
  4. 1 tsp roasted cumin seeds and red chilli powder.
  5. 1/2 inch ginger (grated).
  6. 2 green chillies.
  7. 7-8 curry leaves.
  8. 2 tsp sugar.
  9. Oil for frying.
  10. Water as required.
  11. Salt to taste.

Instructions

  1. First wash the brinjals, slit them into 4.
  2. Marinate the brinjals with salt and keep aside for 10 min.
  3. Pour the yogurt into a serving dish add some water and blend properly.
  4. Add salt, sugar, roasted cumin seeds and red chilli powder to the yogurt and mix well.
  5. Heat oil in a frying pan, deep fry the brinjals and keep aside.
  6. Add the brinjals to the yogurt mixture.
  7. Heat 1 tsp oil in a pan,splutter mustard seeds. Add green chillies, grated ginger, curry leaves.
  8. Pour the above contents into the brinjal and yogurt mixture.
  9. Dahi baigana is ready.

Good recipe but brinjals are uncooked.
