ABOUT Pasta in garlic mushroom sauce with sausages RECIPE

This is a very basic pasta recipe and the source of inspiration of this recipe comes from many places. However, I have tried to improvise it to suit my taste. You may also add a few more ingredients to customise it further. I normally use low fat butter and only butter while making pasta. I like butter more than olive oil. However, as told you may choose to use olive oil instead. The best practice is to cook pasta and sauce simultaneously. Freshly boiled pastas are very moist and mixes easily with the sauce. Avoid boiling pasta before and let it cool or rest until ready to mix with sauce. Enjoy!!!

Ingredients Serving: 2

  1. 100 grams spaghetti pasta
  2. 4 Bird's eye chilli
  3. 5 finely chopped Garlic cloves
  4. A handful of Mushrooms
  5. 2 chicken sausages
  6. 50 grams butter
  7. pepper
  8. 2 tablespoon double cream
  9. Fresh broccoli
  10. olive oil
  11. parmesan cheese 20 grams or 2 processed cheese cubes

Instructions

  1. Add the pasta in a pan with 1 litre of boiling water and let it cook for 20 minutes.
  2. In another heated pan add butter and melt it.
  3. Add finely chopped garlic and mushrooms and cook until soft.
  4. Once cooked, blend them to make a smooth paste. You may add a little milk to get the right texture.
  5. Again add it back to the pan on slow heat. Add the double cream and cheese and cook for another two minutes adding salt and freshly ground pepper as required.
  6. Cut the sausages diagonally into "Coins"(you may refer to this link to know how https://www.youtube.com/watch?v=Wj0zu2eY_oo) and add to the boiling sauce. Tip: Boil the sausages for a minute before adding to the sauce or just thaw them
  7. Add the bird's eye chillies (diagonally cut) to the sauce and turn off the heat. We dont want to cook the chillies for too long. Fresh ones gives a nice kick. These chillies are packed with a great punch. Be careful while consuming.
  8. Your sauce should not take more than 15 mins. Once the pasta is boiled for 20 mins, drain the water and immediately add it to the sauce. Mix well and serve it on the plates.
  9. Take another pan and heat adding two tablespoon of virgin olive oil. make sure the pan is not too hot as Virgin olive oil has low burning point.
  10. Add a handful of broccoli florets and saute (mild fry) for a minute.
  11. Sprinkle salt and freshly ground pepper and serve it along the pasta.
