It's very yummy, tangy & healthy recipe. Today I have tried to give it a twist by adding Urad dal wadas & mint curd.

Ingredients Serving: 5

  1. Ingredients for kachori : Maida. 1 cup
  2. Suji. 1/4 cup
  3. Baking powder 1 pinch
  4. Water to knead the dough
  5. Oil for frying
  6. Salt. 1/2 teaspoon
  7. Ingredients for Dal wadas : Urad dal soaked overnight 1cup
  8. Hing 1/2 tsp, Salt. 1 teaspoon
  9. Ginger paste 1/2 teaspoon
  10. Oil for frying
  11. Ingredients for mint curd : Chopped Mint leaves 1 tablespoon
  12. Curd. 1cup
  13. Roasted cumin powder 1 teaspoon
  14. Salt. 1/4 teaspoon
  15. Ingredients for assembling :
  16. Tomato finely chopped 1/2 cup
  17. Onion finely chopped 1/2 cup
  18. Cucumber finely chopped 1/2cup
  19. Boiled moong dal 1/2 cup
  20. Tamarind chutney 1/2 cup
  21. Pomegranate kernels 1/2 cup
  22. Green mint chutney 1/2 cup
  23. Kishmish 1 tablespoon
  24. Roasted peanuts 1 tablespoon , Beetroot grated 1 tablespoon
  25. Nylon sev 1 tablespoon , Chat masala 1 Teaspoon

Instructions

  1. First mix all mentioned ingredients except oil to knead the dough.
  2. Now keep dough aside for 1/2 an hour.
  3. After half an hour heat oil in a kadhai and roll small Puris from dough.
  4. Now fry these Puris first at medium flame and later on a slow flame for them to become hard.
  5. Keep flipping the Puri. Each Puri will take 5-6 minutes to become crisp.
  6. Now keep aside these ready kachoris to cool.
  7. Now blend all mentioned ingredients under curd to form mint curd.
  8. Keep curd to chill in refrigerator.
  9. Now take all ingredients mentioned under dal wadas.
  10. Keep blending till the dal mixture becomes light and fluffy.
  11. Now deep fry these dal wads on a slow flame.
  12. Quickly soak hot dal wadas in water and squeeze after 2 minutes.
  13. Keep aside soaked dal wadas.
  14. Now we will assemble our Raj kachori.
  15. First take kachori & prick it. Add soaked wada & boiled moong dal .
  16. Now add all the mentioned ingredients to fill kachori.
  17. At last pour mint curd, tamarind chutney & green mint chutney.
  18. Now finally garnish with pomegranate kernels, roasted peanuts & kishmish.
  19. Sprinkle little chat masala & serve immediately.
