Italian walnut and Cinnamon biscottis

Ingredients Serving: 6

  1. APF - 1/2 cup
  2. Wheat flour - 3/4 cup
  3. Walnuts - 1/2 cup
  4. Baking Soda - 1/4 tsp
  5. Baking powder - 1/2 tsp
  6. Oil - 1/4 cup
  7. Sugar - 1/2 cup
  8. egg-1
  9. Cinnamon powder - 1/2 tsp
  10. Vanila essence - 1/2 tsp

Instructions

  1. Preheat oven.
  2. Mix all dry ingredients other than sugar and keep aside
  3. Mix sugar and oil and stir till sugar dissolves.
  4. Add the egg and whisk for 5 mins.
  5. Now add the Vanila essence and fold in the walnuts.
  6. Now fold in the dry ingredients in 3 batches.
  7. Mix nicely
  8. Take the mixture on a floured surface and assemble it to a nice non sticky dough dusting flour if required
  9. Make a log of the dough of 1 inch thickness
  10. Place it on a silver foil and bake at 160 degrees for 30 to 35 min or until the knife inserted in the center comes out clean.
  11. Take out and cool for around 15 min
  12. Cut slices with a sharp knife of desired thickness and arrange on a baking tray for second baking
  13. If it breaks while cutting then place in freezer for 10 mins and continue cutting
  14. Now bake at 160 degrees for 7 to 8 mins. Turn sides and continue baking for another 7 to 8 mins.
  15. Cool completely to enjoy the crispy biscottis with tea.
