Eggless orange and choccolate bund cake

ABOUT Eggless orange and choccolate bund cake RECIPE

Its a spongy soft from inside and crispy from outside. Made from freshly squeezed orange juice and home made sweet condensed milk. My kids favourite tea time bites.

Ingredients Serving: 8

  1. Whole wheat flour-1 1/2cup
  2. Baking Powder - 1 tbsp
  3. baking soda-1/2 tsp
  4. Butter -3/4 cup
  5. Sweetened condensed milk (home made) - 200gm
  6. Yogurt - 1/4 cup
  7. Freshly squeezed orange juice - 1 cup or more if required
  8. Orange pieces - 2-3
  9. Orange zest - 1 /2 tsp
  10. Vanilla extract - 1tsp
  11. Orange food color (optional)
  12. Raisins and almonds - handful
  13. Cocoa powder - 1tbsp

Instructions

  1. We need all these ingredients shown below in a video-
  2. Take a big bowl and keep one sieve on this sift together the whole wheat flour, baking powder and baking soda.
  3. Once more repeat the same process.
  4. Now addin melted butter and sweetened condensed milk.
  5. Mix with whisker uniformly .
  6. Pour orange juice and whisk to incorporate with the flour.
  7. Addin orange juice and mix with hand mixer for 30second.
  8. Addin yogurt
  9. Addin raisins and orange zest.
  10. Now mix cake batter with hand mixer for 2-3 minutes in medium speed to incorporate air in batter.this will make the cake more soft and spongy.
  11. Add in vanilla essence and orange colour and mix uniformly everything with hand mixer.
  12. Addin orange pieces and mix.
  13. Grease the baking tin by spreading 1 tsp oil from your finger all over.
  14. Spread 1 tbsp dry flour in greased baking tin with your fingers by doing this at the time of demolding cake will come out easily from baking tin.
  15. Separate one bowl from the main batter.
  16. Add 1tbsp cocoa powder in this bowl of ready cake batter.
  17. Mix cocoa powder uniformly into the batter with light hands
  18. Now pour this ready chocolate cake batter in greased tin.
  19. Pour orange ready cake batter on chocolate cake batter.
  20. Preheat microwave oven in convection mode at 180degree centigrade.
  21. Adjust the batter uniformly by tapping the tin on slab. By doing this you will get rid of air bubbles present in the batter.
  22. Spread some raisins and sliced almonds on cake batter and keep it inside the preheated microwave oven for baking in convection mode for 35minutes.
  23. Set timer in convection mode for 35minutes . Check inbetween if cake is not cooked increase the time Till the cake is not completely cooked. Keep an eye on the cake it should not burn.
  24. Switch off oven and check by inserting knife or skewer if it comes out clean baking is completed if not increase the timing .
  25. See now cake is completely cooked because skewer which was inserted has come out clean and sides of the cake has separated from baking tin.
  26. Let it remain in tin for 10 more minutes to cool completely.
  27. Demold the cake by keeping one plate on top of the cake and flip it down.
  28. From the base (down) eggles orange chocolate bund cake is looking like a big doughnut.
