ABOUT Sandwich dhokla RECIPE

It's new variation to normal khatta and khaman dhokla as here I'm using both the batters to give a twist and that's why it's called sandwich dhokla!

Ingredients Serving: 4

  1. For white layer:
  2. 1 cup udad daal
  3. 2 cups idli rice
  4. Salt to taste
  5. Water to get idli better consistency
  6. For yellow layer:
  7. 1 cup chickpeas flour
  8. 1 tbsp semolina
  9. 1 tsp Salt
  10. 1 tbsp sugar
  11. 1 tsp Fruit salt
  12. Water
  13. For Tempering:
  14. 1 tbsp oil
  15. 1 tsp mustered seeds
  16. Pinch of Asafoetida
  17. 2 green chilies slices
  18. Other Ingredients:
  19. 1/2 cup sugar diluted water
  20. Pinch of red chilli powder to sh sprinkle on top
  21. Coriander leaves, chillies and coconut powder to garnish
  22. Red, green chutney to serve with

Instructions

  1. First for white Dhokla layer take 2 cups of idli rice and 1 cup udad daal separately into two different bowls and wash it properly.
  2. Now add fenugreek seeds into the udad daal.
  3. Rest both for overnight and grind it into mixture jar in morning.
  4. Now put it into warm place of your kitchen to get fermented. Look at the below pic for reference after 5 hrs.
  5. Take this idli better into medium sized bowl and add 1 tsp of salt to make first layer.
  6. For third layer, take 1 cup of chickpeas flour into medium sized bowl, add 1/4 tsp red chilli powder, 1/2 tsp turmeric powder, salt and sugar and mix it well.
  7. Now add water to get desired consistency like idlis batter and mix it will using whisk to avoid lumps.
  8. Now grade the medium sized plate with oil.
  9. Pour the first layer of idlis batter and put into already hot steamer.
  10. Once first layer is cooked after 7-8 mins, apply green Coriander mint chuteny and cook for another 3 more mins.
  11. Now add fruit salt into yellow chickpeas batter and mix it well and immediately pour that batter on top.
  12. Sprinkle red chilli powder on top and cook for another 10 mins.
  13. Once cooked remove it from heat and let it be at room temperature.
  14. Now for tempering, put oil into small nonstick pan, add mutated seeds, once spluttered, add asafoetida and green chillies. And spread it on Dhokla.
  15. Now pour sugar water on it and rest for another few mins until it gets absorbed.
  16. Cut them into pieces into the shape of your choice.
  17. Serve hot with red and green Chuteny.
  18. Look at the beauty to serve at snacks time! Enjoy!
