Ingredients Serving: 4

  1. 1 cup fine sooji
  2. 1/4 teaspoon Baking Soda
  3. 2 tablespoons maida
  4. Salt to taste
  5. Oil for deep frying the puris
  6. 1 cup whisked curd
  7. 3 boiled potatoes
  8. 1 cup salted Boondi
  9. 1 cup Instant khatti meethi chutney
  10. 1 large onion, finely chopped
  11. 1 cup nylon sev

Instructions

  1. Lightly mash the potatoes and add salt.
  2. Whisk the curd and add salt
  3. Soak the boondi in 2 cups water and strain.
  4. Let it dry for about 30 minutes.
  5. Ready the puris.
  6. Take the sooji, maida, baking soda and salt.
  7. Using as little water as possible knead a very tight dough.
  8. Let it rest for 30 minutes.
  9. Knead out a big roti and using a cookie cutter or a small bottle, cut out the puris.
  10. Deep fry a few in each batch.
  11. Serve with chopped onion, boondi, curd, boiled potatoes mix, nylon sev and chutney.
