A very simple and tasty side dish from Kerala

Ingredients Serving: 4

  1. Beetroot - 2 Big
  2. Fresh grated coconut - 1 /2 cup
  3. Green chilly - 2 to 3 ( adjust to taste )
  4. Small baby onions - 3
  5. Turmeric powder - 1/2 tsp
  6. Salt to taste
  7. Mustard seeds - 1 tsp
  8. Split urad dal - 1 tsp
  9. Coconut oil - 1 tbsp
  10. Curry leaves - 2 sprigs

Instructions

  1. Take Beetroots peel it and wash it.
  2. Then cut into small cubes
  3. Take freshly grated coconut, green chilly and baby onions in a mixer jar and grind it coarsely
  4. After grinding it will look like this
  5. Now take a kadai put oil & when hot add mustard seeds & split urad dal
  6. After it splutters add curry leaves
  7. Put the chopped beetroot in it. Add turmeric powder & salt and mix well.
  8. Now cover with lid and cook for a few minutes till done
  9. Then add the coarsely ground coconut mixture to this
  10. Then mix well and cook again for about 2 minutes.
  11. Turn off the gas and serve hot with rice and sambhar or dal.
