ABOUT Kesar Phirni with Caramelized Nuts RECIPE

Traditional rice custard cooked in milk and condensed milk, flavoured with saffron and topped with caramelised nuts

Ingredients Serving: 2

  1. 150 gm basmati rice
  2. 1 tin condensed milk
  3. 2 cups milk
  4. 1/2 tsp cardamom powder
  5. Few saffron strands
  6. Caramelized nuts -
  7. 1 cup sugar
  8. 1/2 cup nuts

Instructions

  1. Soak the rice for half an hour then grind to a coarse paste
  2. Boil the milk then add cardamom powder, saffron strands and when boiled, add condensed milk, ground rice and cook until thick. Chill it
  3. In another pan add sugar and caramelise it. Add nuts . Pour over the silicon plate or foil paper smeared with ghee and allow it to cool. Crush the caramelised nuts
  4. While serving add the caramelised nuts on top of phirni and serve
  5. I have served it in a traditional clay pot
