ABOUT Almond Cashew Penda ( Dryfruit Penda) RECIPE

Penda is famous traditional Indian sweet loved by all age groups. This is our family recipe for festivals. I made these by using cashews, almonds and some saffron.

Ingredients Serving: 10

  1. Cashew flour 1 cup
  2. Almond flour 1 cup
  3. Sugar 1 and 1/2 cup (or to taste)
  4. Milk 500 ml
  5. Milk powder 1 cup
  6. Saffron strand 10-12
  7. Cardamom powder 1/2 tsp
  8. Ghee 2 tbs
  9. For Garnishing-
  10. Pistachios 8-10
  11. Cardamom seeds 1/2 tsp
  12. saffron strands 8-10

Instructions

  1. Take 2 tbsp lukewarm milk, add saffron strands and leave aside for 10 minutes
  2. Finally, chop pistachios for garnishing
  3. Take a nonstick pan/kadai add milk and keep on medium flame for boiling.
  4. Now add sugar and keep boiling till it becomes a little thick.
  5. Now add milk powder, keep boiling and stirring continuously
  6. Now add almond and cashew flour and mix well.
  7. Add saffron milk
  8. Make sure that there are no lumps in it and excess milk evaporates.
  9. Add ghee into the mixture and keep stirring continuously till the mixture leaves the sides of the pan.
  10. After sometime mixture will become thick like soft dough.
  11. Remove the pan from flame .Your dough is ready for penda.
  12. Take a plate and spread the dough evenly with the help of rolling pin.
  13. Now take a cookie cutter and give the shape of your choice
  14. You may make small balls from the mixture or can give shapes as you like.
  15. Now sprinkle chopped pistachio, saffron and cardamom seeds on penda and serve.
