One of the favourite recipe of mine with walnut and coconut. It is a moist, soft, eggless cake that is delicious

Ingredients Serving: 4

  1. 1 1/2 cup Maida
  2. 1 cup coconut powder (dry)
  3. 1/2 cup fresh milk cream
  4. 1/2 cup curd
  5. 1/2 cup milk powder
  6. 1 cup milk
  7. 1 cup sugar (powdered)
  8. Baking Powder 1 Tsp
  9. Baking soda 1/2 tsp
  10. Tutti fruity 2 tbs
  11. Mix fruit extract 1 tsp
  12. Walnut chopped 2 tbs
  13. Cashew 10

Instructions

  1. Line up your baking pan with butter and dust with flour
  2. Preheat the oven on 180 degrees C before you start baking.
  3. In a bowl add curd and milk, cream, and beat them and also add sugar powder in it. Mix well and keep aside.
  4. Take another bowl, and sieve the flour with baking powder and baking soda.
  5. Mix coconut powder and milk powder in another bowl.
  6. Now take the wet ingredients in a bowl. add coconut powder, flour, and mix one by one together and give a good mix to the batter.
  7. If the mixture is thick add some milk to make a perfect batter.
  8. Add fruit extract and tutti frutti
  9. Pour the batter into the cake tin.
  10. Sprinkle chopped walnuts and cashew over the batter of cake. And bake it for 20/25 minutes.
  11. Bake more 10 minutes to get a golden top
  12. Cool the cake for 10 minutes in the pan itself
  13. De-mould and serve
