ABOUT Kashi Halwa RECIPE

An ancient recipe in South lndian Krishna temples but for me it's a sweet memory of my childhood

Ingredients Serving: 2

  1. Finely grated ash gourd 2 cup
  2. Sugar 1cup
  3. Saffron strands 1/2 tsp
  4. Ghee 1tbsp
  5. Cashews 10-12
  6. Raisins 10-12
  7. Cardamom Powder 1/4 tsp

Instructions

  1. Soak saffron in warm water
  2. Take ghee in another pan and roast cashew till golden brown and roast raisin for few seconds
  3. Take ash gourd in a heavy base pan and cook it on slow flame till water evaporates
  4. Add sugar and cook on slow till almost done
  5. Add saffron and cardamom
  6. Add ghee and roasted dry fruits and saute on medium heat
  7. Serve hot
