ABOUT Flat Green Beans Dhokali With Dabka Wadi. RECIPE

Beans dhokali is Gujju favourite. I have added Besan Dabka( boiled pakora) in it. My Gujju patel neighbour introduced this to me.

Ingredients Serving: 3

  1. Wheat flour 1 cup
  2. Turmeric 1/4 tsp
  3. Chill powder 1/2 tsp
  4. Ajwain 1/4 tsp
  5. Salt to taste
  6. Oil 2 tsp
  7. Flat green beans ( surti papdi and valore papdi ) 2 cups chopped.
  8. chilli powder 1 tsp
  9. Turmeric powder 1/2 tsp
  10. Salt to taste
  11. Ajwain 1/2 tsp
  12. Asafoetida 1 pinch.
  13. Garlic crushed 1tsp
  14. Oil 1 tsp
  15. For Dabka
  16. Besan 1/2 cup
  17. Salt , chilli powder, turmeric to taste
  18. Oil 1 tsp
  19. tomatoes 2
  20. Pomegranate seeds for garnishing.

Instructions

  1. Take wheat flour in a plate. Add oil and masala( salt, turmeric, chilli powder, ajwain ).
  2. Knead flour and keep aside.
  3. Now heat oil in a pan, add asafoetida and ajwain. After it splutters, add water.
  4. Once water starts boiling add beans. Add all masala and let it cook.
  5. Till that take Besan in a bowl and add salt, turmeric, chilli powder and oil. Add Ajwain and make batter like Pakoda. Keep aside.
  6. Make 6 balls and roll roties from the dough. Cover with a cloth so that roties stay moist. ( don't overlap ).
  7. As the water with beans start boiling drop pakodas in boiling water one by one stirring occasionally. Here is a picture of Dabka for your reference.
  8. After dropping all Pakodas , cut the roti in diamond shape and drop in same water. Keep stirring in between so that dhokali doesn't not stick to each other.
  9. Cover the pan and cook. Pour some water over the lid . This will not allow inside water to evaporate and dry the Dhokali.
  10. In another pan take very little oil and saute chopped Tomatoes. Add in Dhokali after it cooks.
  11. Take out hot in a serving bowl and add 1 tbsp ghee for taste. ( optional ).
  12. Garnish with coriander leaves and Pomegranate seeds. Serve with mango chutney
  13. We always eat Rice papdi with it.
  14. You can eat Rice with the Dhokali too.
