Carrot Halwa or Gajar ka Halwa is a popular winter dessert . I thought about using the carrots in a different form to make this rabdi and it's perfect complement to a romantic dinner .........
Heat ghee in a pan and cook the carrots and cashewnuts for 2 minutes till the raw smell of the carrots and cashewnuts turns pink .
Remove from the heat and cool to room temperature .
Grind the half portions of carrots and cashewnuts mixture to a coarse paste by adding 2 - 3 tablespoons of milk and keep aside .
In a deep bottom pan boil the milk , add them half portions of carrots and boil for 10 minutes then add carrots and cashewnuts mixture , mawa , sugar and condensed milk and mix well then cook till the sugar dissolved and milk is thicker consistency .
After a while the mixture will start coating the back of the spoon and will also start leaving the sides . This is sign that carrot rabdi is done .
