ABOUT Dudh Puli RECIPE

Jaggery and Coconut Stuffed Rice flour dumplings in sweetened and thickened milk , a very popular bengali pitha , normally prepared and eaten in winters . Pitha means type of rice cake .

Ingredients Serving: 4

  1. Rice soaked for 6 hrs 1 cup
  2. Water 1 cup
  3. Salt a pinch
  4. Stuffing :
  5. Coconut 1 cup
  6. Cardamom Powder 1/4 tsp
  7. Some broken walnuts
  8. Jaggery 1/2 cup
  9. Water 1/2 cup
  10. For thickened milk / rabdi :
  11. Milk 2 cups
  12. Sugar 1/2 cup
  13. Saffron strands few
  14. Pistachios chopped 3_4
  15. Rose water or cardamom powder

Instructions

  1. Drain water and spread rice in a colander
  2. When they are dry grind to fine powder
  3. Now boil water and salt
  4. Add rice flour
  5. Let it be cooled down little
  6. Now knead and make soft dough
  7. Make equal sized balls
  8. Make a depression in the centre of each ball
  9. Keep aside , cover them
  10. Make stuffing
  11. Add water and jaggery
  12. When mixture starts boiling add scrapped coconut and walnuts
  13. Stir continuously until it becomes sticky and dry
  14. Switch off gas
  15. Make small balls , give oblong shapes
  16. Add this stuffing to the rice balls
  17. Now seal them and give them whatever shape you like
  18. Add milk in a heavy pan , continue to boil in low heat
  19. Stir until it thickens
  20. Add sugar
  21. Mix again , in low heat
  22. Heat ghee in a nonstick pan
  23. Fry lightly the stuffed rice flour dumplings both sides
  24. Now add in the thickened milk
  25. Boil them for 15 mins in low heat
  26. Add saffron stands
  27. Switch off gas
  28. Add rose water
  29. Garnish with pistachios
  30. Chill in the freezer for 2 hours
  31. Serve chilled
