This recipe well expresses the goodness of wheat as lots of dry fruits are rosted with whole wheat flour in pure ghee and binded into ladoos. These are warm in nature and have lot of nutritional value that's why these are made in winters and also given to nursing mothers.

Ingredients Serving: 10

  1. Whole wheat Flour 3 cups
  2. Pure desi ghee 2 cups
  3. Grated jaggery 2 cups
  4. Edible gum 3/4 cup
  5. Almonds 1 cup
  6. Cashews 1/2 cup
  7. Raisins 1 cup
  8. Melon seeds 1 cup
  9. Dry ginger powder 3/4 cup
  10. Poppy seeds 1 tbsp
  11. Nutmeg powder 1 tesp
  12. Cardamom powder 1 tesp

Instructions

  1. Crush edible gum in tiny pieces in a mortar and dry it in bright sunshine for 2 to 3 hours.
  2. Dry roast poppy seeds and make coarse powder.
  3. Chop almonds and cashews.
  4. Heat ghee in a big heavy bottomed wok.
  5. Add whole wheat flour and roast on medium flame till golden pink or nice roasted aroma raises up. Here you need a lot of patience as it takes around 40 to 45 minutes and take care that flour doesn't stick to bottom of wok.
  6. Now add chopped almonds and cashews.
  7. Add raisins and ginger powder.
  8. Roast further for 3-4 minutes.
  9. Add melon seeds and crushed and dried edible gum. Keep stirring.
  10. Melon seeds would fluff up instantly ,also gum would fluff up like popcorns.
  11. Add jaggery powder and mix well till jaggery dissolves.
  12. Switch off the flame and continue to stir for further five minutes to prevent burning flour at bottom.
  13. Here we hadn't roasted dry fruits separately as they would get cooked in heat of roasting flour.
  14. Keep in mind that this roasted flour is too hot that it will get more dark even after removing from heat.
  15. Let it cool down to bearable hot to bind laddoos with hands.
  16. Bind whole mix into laddoos.
  17. These stays good for months.
