Paneer biryani- hyderabadi style

ABOUT Paneer biryani- hyderabadi style RECIPE

This dish has quite suttle flavours as we have used ghee and there is also goodness of saffron in it and paneer which is a very good source of protein for vegetarians

Ingredients Serving: 2

  1. Onions 1 full cup- sliced
  2. Basmathi rice 1 cup
  3. Green chillies 2tsp
  4. All whole spices(shahjeera,Cloves3-4, green elaichi, anise flower dry, javithri, nutmeg powder
  5. Ginger garlic paste 1-2 tsp
  6. turmeric a pinch
  7. Red chili powder 1-2 tsp
  8. Curd 1/2 cup
  9. Desi ghee/clarified butter 2-3 tbsp
  10. Cashew nuts 7-8
  11. Saffron soaked in warm milk
  12. Dhaniya powder 1 tsp
  13. Jeera powder1/4 tsp
  14. Coriander leaves 1/2 cup
  15. Mint leaves 1/2 cup
  16. Birista(fried onions) 1/2 cup

Instructions

  1. Take 1 cup basmati rice and soak it in water for 20 mins
  2. Take a thick bottomed pan or your pressure cooker pan add some oil to it and heat .
  3. Add sliced onions into the pan and fry these onions on slow-medium flame until they turn into dark brown and crispy. Note: don't burn the onions it might give bitter taste
  4. Remove the onions and put them on a paper napkin.
  5. Meanwhile wash the rice and it along with it add all the whole spices to the boiling water along with a dollop of ghee.
  6. Cook the rice partially I.e., until it's 3/4 done.
  7. Add some two 2tbsp of ghee to the pan and add all your whole garam masala in it..( bay leaf, shahjeera, green elachi, javithri, anise star nutmeg powder).
  8. Add ginger garlic paste, and sliced onions to it.
  9. Add green chillies, cashew nuts and saute for a minute
  10. Add chopped tomatoes and add salt cook until they turn soft
  11. Add turmeric powder, dhaniya powder, jeera powder, red chili powder. And mix them well.
  12. Add fresh curd to the mixture. And mix well . Lastly add fresh cubbed paneer.mix it.
  13. Remove some curry and place it aside.
  14. Add a layer of rice on the initial curry layer in the cooker pan. Then add a little saffron milk above it, a tsp ghee, little chopped coriander and mint leaves, and fried onions
  15. Add another layer of curry over this and place another layer of rice and again add saffron milk, a tsp ghee, little chopped coriander and mint leaves and fried onions over it. Place the cooker lid and let the rice cook to tenderness.
  16. Remove the cooker lid after 10-15 mins Check the rice cooked to tenderness and serve your hot paneer biryani with some good saalan and raita
