ABOUT Vegetable cutlets RECIPE

These mix vegetable cutlets are ideal for tiffin or for breakfast,specially for those kids who are fussy eaters.

Ingredients Serving: 4

  1. Potatoes-3
  2. Carrot-1 medium
  3. Peas-1 cup
  4. Beetroot-1 small
  5. Capsicum-1
  6. Breadcrumbs
  7. Bread slices-2
  8. Maida-2 tbsp
  9. Ginger,garlic and green chilli paste
  10. Salt
  11. Corriander
  12. Chaat masala-1 tbsp
  13. Garam masala-1 tsp
  14. Lemon juice-1 tsp

Instructions

  1. Boil potatoes and carrots,peas and beet in cooker.Keep carrot,peas and beet without water in a seperate container.
  2. Cut capsicum in small pieces.
  3. Mash all boiled vegetables and add capsicum,ginger garlic and greenchilli paste,salt and masalas.
  4. Moisten the bread in water and squeeze out all water and add to the vegetable mixture.Mix everything properly.
  5. In another bowl take maida and add water to make a paste of medium consistency.
  6. Now shape cutlets as you wish.I have used heartshaped and flowershaped moulds.
  7. Now dip these in maida batter and roll in bread crumbs.
  8. Shallow fry in nonstick pan with little oil.Turn when lower side becomes golden.Roast both sides golden and serve hot with green chutney or tomato ketchup.
