I followed this recipe from the book "Microoven Ee Ranna " by Bela Dey and Bina Devi , eggplants in creamy gravy .

Ingredients Serving: 4

  1. Eggplant 3
  2. yoghurt 1 cup
  3. Chick peas flour 1/4 cup
  4. Ginger garlic paste 2 tsp
  5. Coriander powder 1/2 tsp
  6. Garam masala 1 tsp
  7. Cumin Powder 1/2 Tsp
  8. Turmeric powder 1/4 tsp
  9. salt as per taste
  10. Onion 2 medium
  11. Green chilli 3_4
  12. Coriander leaves 1 tsp
  13. Oil 3 tsp
  14. Red dry chilli 3
  15. Whole cumin seeds 1/2 tsp
  16. Asafoetida 1/4 Tsp

Instructions

  1. Wash and cut egg plant in 1 inch long piece
  2. Now marinate them with garlic ginger paste , coriander powder
  3. Add chilli powder , salt, turmeric powder and garam masala
  4. Keep aside for 10 mins
  5. Chop onions , coriander leaves , green chilli
  6. Mix yoghurt and besan together
  7. Add 1 1/2 cups water , keep aside
  8. Heat oil , add onion and whole jeera
  9. Fry until translucent
  10. Now add marinated brinjal
  11. Cook for 19_ 15 mins
  12. Add green chilli
  13. Keep aside
  14. Heat oil
  15. Now add yoghurt and besan mixture
  16. Stir and cook for 10 mins
  17. Add asafoetida and dry red chilli
  18. Now mix cooked brinjal
  19. Garnish with coriander leaves
  20. Serve hot with rice or roti
