ABOUT Light and Fresh Potato salad RECIPE

Healthy and light for the season of fresh veggies around this time of the year, I got this lovely book SALAD DAYS from 'Good House keeping'Oh so delicious "and wow Salads .I picked up this one as the lightest and fresh looking with lovely Red Raddish to Adorn the look and taste good too.

Ingredients Serving: 2

  1. 250 grams New Potatoes ,unpeeled,chopped into bite size pieces
  2. 100 grams a bunch of raddish (red)
  3. 2-3 Spring onions thinly sliced
  4. 2 tblspn Olive oil
  5. 2tblspn wholegrain mustard
  6. Salt and freshly ground Black pepper
  7. A punnet of Cress (optional)

Instructions

  1. Cook potatoes in salted boiling water for 15 minutes until just tender but not breaking apart.
  2. While the potatoes are cooking whisk together the Oil,mustard, lemon juice and the seasoning.
  3. Drain the potatoes and leave to steam dry for 5minutes and put them back in the Pan
  4. Pour the dressing over and add the Raddishes and spring onions .Fold together trying not to break up the potatoes
  5. Tip into a serving dish and serve on side
  6. Scatter cress if preferred
