This delicious thai massaman mutton curry i got from simply nigella and massaman curry paste learnt from cooking with poo..thai massaman curry is relatively mild curry than any other thai curry.i can say its a kind of delicilus stew made with mutton and potato .massaman curry is quite similar to our indian meat curry..actually the fantastic flavours of this curry i cant explain in words.give this recipe a try into your kitchen.

Ingredients Serving: 3

  1. For the gravy---
  2. Mutton - 1 kg
  3. Coconut milk - 1 1/2cup (large coffee mug) OR 400ml
  4. Palm sugar - 1tbsp
  5. Tamarind paste - 2 tbsp
  6. Massaman curry paste - 4-5 tbsp
  7. Sea salt - 1 tsp / salt - as required
  8. Potatoes - 3 cut into halves
  9. Handful of coriander leaves or thai basil
  10. For massaman curry paste--
  11. Fennel seeds - 11/2tsp
  12. Coriander seeds - 1 1/2tsp
  13. cumin seeds- 1tsp
  14. Black peppercorn - 1 tsp
  15. Cinnamon - 1/2inch stick
  16. Seeds of Green cardamom - 4
  17. Cloves - 4-5
  18. Dry red chili - 5
  19. Red onion - 1 chopped
  20. Galangal - 1/2 inch stick ,chopped
  21. Garlic - 10-12
  22. Lemongrass- 1tbsp chopped

Instructions

  1. Take a cup of hot water .add tamarind paste and palm sugar .stir till palm sugar dissolves completely. Keep aside.
  2. Making massaman curry paste--
  3. heat a pan add fennel ,coriander, cumin seeds,black peppercorn, cinanman, seeds of green cardamom, gloves ,dry red chili.dry roast all ingredients till get nice aroma and have light browned. Let it little cool.then make a fine powder.
  4. Now put chopped onion , galangal,lemongrass,garlic in hot tawa .dry roast it for 3-4 mins or till raw smell disappears..then put it in a blender and blend till smooth.
  5. Then add dry powder ingredients into the masala paste and blend to mix all.. Ready massaman curry paste
  6. Heat a pressure cooker add 1 1/2 cup of water .add washed mutton .salt to taste ,bay leaf, cinanman, cardamom. Close lid.wait for 1 whistle then turn down flame and Cook mutton for 10 mins.
  7. Then sperate mutton and stock..reserve mutton stock.
  8. Take a pan add coconut cream (take out cream from the top of the coconut milk ) ,add massaman curry paste .mix well.then heat the pan.
  9. Stir it for a minute.add mutton .coated well with curry paste..then add coconut milk and mutton stock .stir it for a mintue.
  10. Then add potatoes. Tamarind sugar water.sea salt or salt to taste .give a nice stir .bring to bubble. Then turn down flame and simmer it for 10mins. Or till gravy thicken and mutton cooked well.
  11. Check seasoning..sprinkle coriander leaves or thai basil.....Ready massaman mutton curry.serve it with steam rice.
