ABOUT Punjabi Samosa RECIPE

These crispy Samosas tastes same as samosas we eat in cinema theaters. I have learned it from my mother during my teens. Let us understand this recipe step by step.

Ingredients Serving: 8

  1. 6-7 Boiled Potatoes
  2. 3 Cups Maida/all purpose flour
  3. Green peas - 1 cup
  4. 1 dry red chilly
  5. Black peppercorns- 12 nos
  6. 1 piece of cinnamon
  7. Mustard seeds - 1 tsp
  8. 7-8 cashewnuts
  9. Kishmish/Rasins
  10. 1 + 1/2 tsp coriander seeds
  11. 3/4 tsp cumin seeds
  12. 2 Cardamons
  13. Salt as required
  14. Corriander leaves- handful
  15. Refined flour as required

Instructions

  1. Dough preparation :
  2. In a bowl add all purpose flour ( Maida) and salt.
  3. Heat 1/4 cup oil and add it to the flour, stir with spoon
  4. Mix and rub well it with your both hands ( see the pic below )
  5. We are doing this step for crispiness of the outer cover.
  6. Add lukewarm water little by little and knead well. Remember, dough should be hard.
  7. Let us prepare Samosa filling :
  8. Smash potatoes, add in salt and mix it.
  9. Heat a pan. Roast dry red chilly and all spices till aromatic. Grind it to a mixer, make fine masala powder and keep aside
  10. Heat 2 tsp oil in a wok. Add mustard seeds. Once mustard seeds crackles add cashew nuts, kismis and dry masala powder and stir for a minute.
  11. Add in boiled peas, little salt and mix well. Turn off gas.
  12. In a plate add peas mixture, smashed potatoes and coriander leaves. Mix well.
  13. Samosa making :
  14. From the dough make 12 big balls.
  15. Dust the dough ball with all purpose flour and then start rolling the dough into oval shaped rotis. Cut roties in 2 parts with the help of knife.
  16. Take one part on palm. straight side should be at bottom and rounded side should above. Apply little water on edges and make a broad cone like this :-
  17. Fill the cone with mixture
  18. seal it
  19. apply little water on right corner and fold it too.
  20. Samosas are ready to fry
  21. Heat oil in a kadai and deep fry Samosas on low flame till golden brown..
