It is a healthy and wholesome snack to appease the hunger pangs. These muffins are sugar-free, gluten-free, eggless and vegan. They are loaded with the goodness of bananas, jowar and ragi. Try this and stay fit.

Ingredients Serving: 10

  1. Jowar flour 1 cup
  2. Ragi flour 1 cup
  3. Cocoa powder 2 tbsp
  4. Bananas 3 large
  5. Jaggery powder 1 cup
  6. Olive oil 1/2 cup
  7. Flaxseed powder 2 tbsp
  8. Baking powder 1 tsp
  9. Baking soda 1 tsp
  10. Vanilla essence 1 tsp
  11. Pinch of salt

Instructions

  1. Mix the flax seed powder in 1/ 4 cup water and keep aside for 10-15 minutes. It will turn into gelatinous.
  2. Sieve all the flours with cocoa powder, baking powder, soda and salt. Keep aside.
  3. In a mixing bowl peel and mash the bananas using a fork to get a smooth pulp.
  4. Add jaggery powder to this and mix till evenly combined.
  5. Add vanilla essence, flaxseed gel and oil and mix until well combined.
  6. Now slowly add in all the dry ingredients to ensure there are no lumps.
  7. Spoon the batter into muffin tray lined with liners.
  8. Bake in a preheated oven at 180 degree Centigrade for 20-25 minutes or until a toothpick inserted comes out clean.
