When a dessert requires less ingredients, less sugar, has beautiful natural colour and can be made quickly, what more one can ask for. This is one such dessert with healthy ingredients and natural colour that does not leave you feel guilty.

Ingredients Serving: 4

  1. 1/3 cup cranberries
  2. 1/4 cup blueberries
  3. 2 tablespoons sugar
  4. 1 teaspoon unsalted butter
  5. 1/2 cup Desiccated coconut
  6. 1/3 cup grated cottage cheese
  7. 1/4 teaspoon cardamom powder
  8. 2-3 Tablespoons coconut milk

Instructions

  1. Blend and puree the cranberries and blueberries with sugar and a tablespoon of hot water till nicely pureed.
  2. Add in the cottage cheese and blend again to get a thick paste.
  3. In a pan, add the butter and heat on medium low heat till it melts.
  4. Add in the desiccated coconut in the pan and roast for 2-3 minutes, stirring occasionally, on medium low heat.
  5. Add in the cardamom powder and the cranberries blueberry puree and mix well stirring continuously.
  6. If the mixture doesn't come together and is too dry, only then add a little coconut milk.
  7. Add a tablespoon of roasted coconut if it's too runny.
  8. Take off the heat after 2-3 minutes of continuous stirring, when the mixture looks like a dough.
  9. Let it sit and cool for 5 minutes.
  10. Shape the mixture into small balls by stuffing dry cranberries inside.
  11. Refrigerate for 10 minutes and roll these balls into desiccated coconut.
  12. Your Berry Berry Laddoos are ready to serve.
