Ingredients Serving: 4

  1. 2 cups maida
  2. Baking power 1/2 tsp
  3. 1 pinch baking soda
  4. Sugar 1 tbsp
  5. Curd 1/2 cup
  6. Oil 1 tbsp
  7. Onion 1
  8. Green chilli - 2
  9. Grated paneer- 1 cup
  10. Ajwain 1/4 tsp
  11. Grated ginger 1 inch
  12. Kalonji

Instructions

  1. In a bowl take all the ingredients, add water and then with your hands lightly mix everything. Add water in parts while kneading.
  2. Make a soft dough and cover it with a thin cloth and keep aside for 1-2 hours.
  3. For stuffing, grate paneer in a bowl and add all the spices, and salt to taste.
  4. After the dough has been rested properly, make small balls and dust it with maida. Now with the help of a rolling pin, roll it out.
  5. Place small amount of stuffing in the center and cover it properly so that the filling stays inside.
  6. Now gently press the dough with your palm or you can roll it out again with a rolling pin, make sure that the stuffing does not come out.
  7. Place the rolled kulcha on a pre heated tawa or non stick pan, spread some ghee and let it cook. Now flip and cook it from other side. Repeat this process until the kulchha is perfectly cooked.
  8. Serve it hot with pickle or any other gravy dish.
