ABOUT Gujarati Dal Vada RECIPE

Dal Vada, as the moong dal fritters are called, is one of the most popular street foods in Gujarat; to the extent that each place will have its own variant. I am sharing my favourite version, the Dal Vadas as they make it in Ahmedabad. Gujarati dal vada is a delicious and famous dish of Gujarati cuisine. Gujarati cuisine is the cuisine of the state Gujarat which is primarily a vegetarian state due to the influence of Jain vegetarianism. Gujarati cuisine is influenced from North Gujarat, Kathiawad, Kachchh and Surat. Dal vada is one of the most popular street foods of Gujarat. Gujarati dal vada is amazing in taste, they are crispy from outside and soft from inside. You can serve it as a tea time snack. Gujarati dal vada is an easy and quick recipe. You can easily prepare it at your home. From the better butter recipes you can easily know how to make Gujarati dal vada at your home. Drain the soaked dal, add ginger and green chilies and grind them by using little water. Add the chopped garlic, salt and cumin to it and mix them well. Drop the dumplings of the batter into hot oil and deep fry on the medium flame till they turns to golden color. You can impress your guests by serving this Gujarati dal vada with green chutney or tomato sauce.

Ingredients Serving: 4

  1. Green Gram Dal With Skin/Chhilkewali Moong Dal 1 and 1/2 cup
  2. Ginger 1 and 1/2"
  3. Green Chillies 4-6 (as per taste)
  4. Garlic crushed 1 tsp (optional)
  5. Cumin Seeds/Jeera 1 tsp
  6. Lemon juice 1 tsp
  7. Salt to taste
  8. Oil for deep frying + 1 tbsp to be added in batter

Instructions

  1. Wash and soak the dal for 3 hours. Drain, add ginger and green chillies, grind, using very little or no water. The batter we need has to be thick and slightly grainy in texture, similar to sooji/semolina.
  2. Add the crushed garlic, salt, jeera and mix well. Whisk the batter well to incorporate air into it. Continue till it feels fluffy, it is tedious work and requires effort.
  3. In the meantime heat oil in a kadhai/wok. Add the lemon juice to the batter and pour hot oil over it. Do this only when you are about to fry the vadas. Give it a good whisk.
  4. Drop dumplings of the batter into hot oil with the help of fingers or a spoon. Deep fry on a medium flame till they are crisp golden. Serve with onion rings and fried green chillies.
