ABOUT Gujarati Valsadi Vada RECIPE

The Gujarati Valsadi Vada is very healthy. It is a multigrain masala vada that is made from rice, wheat millets, dals and spiced with ginger and chilies. Serve it with green chutney.

Ingredients Serving: 4

  1. Whole wheat 1/2 cup
  2. Rice 1/2 cup
  3. Urad dal 1 tbsp
  4. Chana dal 1 tbsp
  5. Tuvar dal 1 tbsp
  6. Jowar grains 1 tbsp
  7. Yogurt 1 cup
  8. 1 inch piece of ginger, grated
  9. Green chilies 2 , finely chopped
  10. Turmeric powder 1/4 tsp
  11. Asafoetida 1/4 tsp
  12. Oil for frying
  13. Salt to taste

Instructions

  1. Take a heavy bottom pan and roast all the grains and dals separately on a low to medium heat till they turn light brown.
  2. Now keep it aside for cooling.
  3. Then grind all the mix grains into a coarse powder in a flour mill.
  4. Take a cup of flour and add turmeric powder , asafoetida, salt, ginger, chili and yogurt.
  5. The batter should be of thick consistency. Mix well and keep aside for two hours.
  6. Heat oil for deep frying. Once the oil gets hot make small rounds of the vada and slide it into the hot oil over medium heat.
  7. Deep fry till crispy and golden.
  8. Transfer the vada on tissue paper removing excess oil.
  9. Serve the vadas alongwith green chutney.
