Melt in mouth soft and scumptious malpua.

Ingredients Serving: 6

  1. For Rabri
  2. 1 liter full fat milk
  3. 2 tablespoon sugar
  4. 2 tablespoon milk powder
  5. Crushed seeds of 4 cardmoms
  6. For sugar syrup
  7. 2 bowls sugar
  8. 1 bowl water
  9. For malpuas
  10. 1 bowl all purpose flour
  11. 1/4 bowl mava /khoya
  12. 1/4 teaspoon baking soda
  13. Water to make batter approx 1 cup
  14. Oil for frying
  15. Few chopped nuts for garnishing

Instructions

  1. For rabri
  2. Boil milk till it is reduced to half.
  3. Add milk powder, mix and boil till desired thickness.
  4. Add sugar along with cardmoms and cook for few more minutes.
  5. Switch off the gas. The milk will thicken some more after cooling.
  6. For sugar syrup
  7. Boil water along with sugar till it melts completely. Do not make a thread just let it boil for few mins till sugar melts.
  8. Mix mava in maida. Add water to make a batter of pouring consistency without any lumps.
  9. Heat oil or ghee. Pour 1 spoon batter in oil. Fry on medium heat from both sides till golden colour. Then dip the puas in chashni. Serve hot with rabri and with the garnishing of dry fruits as per choice.
