Baked Stuffed Mushroom is a simple yet delicious healthy appetizer prepared with mushrooms. The mushrooms are stuffed with veggies and topped with cheese and baked.

Ingredients Serving: 2

  1. Mushrooms - 8
  2. Grated cheese - 1 cup
  3. Red capsicum - 1
  4. Green capsicum - 1
  5. Onion - 1
  6. Ginger Garlic paste - 1 teaspoon
  7. Mixed Herbs - 1 Teaspoon
  8. Black Pepper Powder - 1 teaspoon
  9. Olive oil - 2 Teaspoon
  10. Coriander leaves / Parsley - few
  11. Salt - to taste

Instructions

  1. Remove the stems of mushrooms and keep it aside.
  2. Chop the stems of mushrooms and the vegetables.
  3. Finely chop the onions and coriander leaves / parsley.
  4. Heat oil in a pan.
  5. Add onions and ginger-garlic paste and fry till the smell goes and onion becomes slight brown in color.
  6. Add the vegetables one by one and cook till they are half cooked.
  7. Add salt and mix well.
  8. Then add herbs and pepper powder and mix well.
  9. Sprinkle coriander leaves and switch off the flame.
  10. In an oil greased plate place the mushrooms and stuff with the vegetable mixture.
  11. Spread the grated cheese on top of the stuffings.
  12. Place it in a preheated oven for 12 minutes in 180 degree Celsius.
  13. Bake it and serve.
