ABOUT Desi fondue with Accompaniments RECIPE

Desi fondue with Accompaniments : Salad, Homemade Nachos, stirfried Mushrooms & buttered Pav. I have named it 'Desi Fondue' so as to suit it to our indian taste buds with masalas. Dip, dunk & enjoy.

Ingredients Serving: 4

  1. For the Fondue:
  2. Maida/ Refined flour - 3 tbsp
  3. Lasun/Garlic flake - 1
  4. Milk - 1 glass
  5. cheese cubes - 4
  6. Butter - 2 tsp
  7. 2 tsp - tomato ketchup
  8. 1 tsp - pavbhaji masala
  9. Garam masala powder - A pinch
  10. For Nachos at home:
  11. 250 gms - Maize flour (makkai atta)
  12. 3 tbsp - maida/refined flour
  13. Carom seeds - 1tsp
  14. Oregano - 1 tsp
  15. a pinch of hing
  16. oil for deep frying
  17. salt to taste

Instructions

  1. Fondue: Heat a heavy bottom pan, rub a garlic clove into it. Put butter plus a little oil this will prevent burning of butter. Add maida saute till the aroma comes & the colour changes to light pink all on a slow flame.
  2. Add in the milk then cheese cubes, stir it till it thickens. Put off the flame. Add 2 tsp of tomato ketchup into it. Add pav bhaji masala and garam masala. Give it a nice mix. Done
  3. For the Nachos: Mix all the mentioned ingredients with 2 tbsp oil and make dough like rotis, give rest for at least 10 minutes, make round shape rotis then cut into diamond shape. Pierce them with knife all over.
  4. Deep fry them on medium to high flame till the colour changes to golden & and it turns crisp.
  5. Salad: Carrots, capsicum, cucumbers cut lengthwise. Saute mushrooms in butter with salt & black pepper powder. You can blanch the baby corns & broccoli too.
  6. For buttered pav: Cut pav into cube shapes. Saute in butter.
