Cheesy inside cheesy outside. An all time favourite with kids. Crispy corn balls filled with cheesy garlic flavour.

Ingredients Serving: 2

  1. Boiled sweetcorn - 1/2 cup
  2. Boiled & mashed potatoes - 2 small
  3. Grated mozzarella cheese - 1/2 cup
  4. Grated mozzarella cheese - 2 tbsp (for fondue)
  5. Bread crumbs - 3/4th cup
  6. Wheat flour - 3 tbsp
  7. Pepper powder - 1 tbsp
  8. Grated garlic - 3 tbsp
  9. Mixed herbs seasoning - 3 tsp
  10. Chopped Coriander leaves - 2 tbsp
  11. Salt - as per taste
  12. Milk - 1/2 cup (for coating)
  13. Milk - 1/2 cup (for fondue)
  14. Butter - 2 tbsp
  15. Cheese spread - 2 tbsp
  16. Chopped green chillies - 2
  17. Red capsicum - 1
  18. Oil - for frying

Instructions

  1. Let's assemble all our ingredients.
  2. Lightly crush the boiled corn in grinder and take in a mixing bowl along with mashed potatoes, mozzarella cheese 1/2 cup , 1 & 1/2 tbsp grated garlic, pepper powder, herb seasoning, coriander leaves and salt. ( be careful while adding salt because cheese and seasoning also contain salt, so add only as per your requirement)
  3. Mix and combine everything very well to make the mixture for the balls ready.
  4. Make small grape sized balls with the mixture.
  5. After all the balls are rolled and ready, make a paste by mixing milk and maida. Also keep the bread crumbs ready for coating.
  6. Take each ball dip in the paste and coat with the bread crumbs very well.
  7. Now the balls are ready to be fried. In a kadhai take oil when it's hot put the corn balls one by one.
  8. Fry them till they turn nice crispy and golden brown.
  9. I have used capsicum to get a light crunch along with the corn balls. Cut them in any desired shape. I have cut them in geometrical shapes.
  10. On medium flame in a pan take 1/2 tbsp butter and saute capsicum for 2 minutes with pinch of salt and pepper as seasoning. After they are done remove in a bowl.
  11. Now for the fondue in the same pan take rest of the butter. On medium flame saute the rest of the grated garlic and chopped green chillies until the raw smell is gone.
  12. Now pour 1/2 cup milk and add in the cheese spread and 2 tbsp mozzarella cheese. Keep on stirring and mix everything very well. When it starts boiling and mixture gets thick our fondue is ready.
  13. Pour the hot cheesy fondue into shot glasses. Garnish with Coriander leaves.
  14. Assemble the capsicum and corn balls on toothpicks.
  15. Serve corn balls with hot cheesy fondue.
