Samosas are a favourite of everyone in North. I love samosas any time at the same time I love making samosas.

Ingredients Serving: 4
For the filling -
Potatoes - 2 medium sized cut into small pieces
Oil 2 tbsp + for frying
Dhania powder - 2 tsp
Jeera -1 tsp
Hing a generous pinch
Sabut dhania 1/2 a teaspoon
Red chilli powder - 1/2 tsp
Garam masala 1/2 tsp
Mango powder 1/2 a teaspoon
Ginger grated 1tsp
Green chillies finely chopped 1
Green coriander finally chopped 1tbsp
Salt to taste
For the pastry dough
Maida - 1 cup
Ghee - 2 tbsp
Ajwain 1/2 a teaspoon
Salt a pinch
Instructions
To prepare the dough mix ghee in maida, rub it with your finger tips until it becomes like bread crumbs.
Add salt and ajwain to the maida, pour little water a little water and knead the dough.
To prepare the filling heat oil in a wok or pan.
Put jeera , heeng sabut dhania, let it splutter. Add potato pieces, salt and cover to cook.
When potatoes are cooked add dhania powder,red chilli powder, and mango powder garam masala and saute for 3,4 minutes. Add grated ginger, green chilli and chopped dhania and mix well. Put off the gas.
Take a little dough(little bigger than a lemon size)
Roll it in oval shaped roti.
Cut it from centre horizontally.
Take a piece apply a little water on the edges and make a cone.
Fill a spoon full of filling and seal the edges.
Repeat till you use all the ingredients.
Heat oil in a kadhai /wok fry the samosas on medium heat in batches till golden brown.
Take out on an absorbent paper.
Serve hot with green chutney.
