ABOUT Penang Laksa Inspired Noodle Broth RECIPE

It's cuisine is exotic, unique and inspiring. In Penang, any hawkers area or malls you will find pictures of noodle bowls. It is filled with yummy looking noodles and broth topped with various herbs and greens.

Ingredients Serving: 4

  1. 3 bundles of flat eggfree noodles
  2. 1/2 a small lime (to garnish)
  3. 4 cups of water
  4. 1 tsp of tomato paste
  5. A handful of thinly sliced cabbage
  6. A handful of frozen peas
  7. Salt to taste
  8. 1/2 tsp of pepper powder
  9. One bunch of cleaned fresh watercress leaves
  10. 1 tsp of sliced ginger flower
  11. 1/2 tsp of thai basil leaves
  12. 1/2 tsp of mint leaves
  13. 1 tsp of red chillies sliced

Instructions

  1. In a deep saucepan, bring the water and tomato paste and salt together to a boil.
  2. Drop in the cabbage and peas in the broth. Bring it to a rolling boil and drop in the noodles. Then cook the noodles, take it off the heat, but don't drain the noodles.
  3. Into the serving bowl, place a bundle of cooked noodles with the veggies in the center of the bowl.
  4. Now, place the ginger flower, sliced red chillies, basil leaves, and mint leaves in the bowl.
  5. Top the bowl with steaming hot broth and place the lime and watercress in the bowl. The broth will steam the aromatics into the noodles.
  6. Enjoy the hearty noodles with friends and family!
