ABOUT Watalappan RECIPE

A SriLankan coconut milk based pudding.

Ingredients Serving: 4

  1. Coconut milk 1 cup
  2. Egg yolks 2
  3. Egg 1.5
  4. Gud/ Jaggery 1/2 cup
  5. Cardamom powder 1/4 tsp
  6. Nutmeg powder 1/4 tsp
  7. Sugar for caramel 1 tsp

Instructions

  1. First caramelize the mould. Also beat the egg yolks with gud and separately beat the eggs.
  2. Mix it well with coconut milk. Then add in the cardamon and nutmeg powder. Let all the ingredients incorporate well with the coconut milk.
  3. Pour water in a cooker pan, then put the cooker net inside.
  4. Cover the mould with an aluminium foil and place it in the hot pan. The flame should be low.
  5. Steam it for 25 minutes. Once it's cooled, keep it in the fridge to set.
  6. Then demould and garnish it with fresh coconut and cherries.
