ABOUT Bassundi RECIPE

This is a very sweet dish made with milk and dry fruits in it. The milk is reduced on low flame. The grainy texture at the end makes it really tasty.

Ingredients Serving: 2

  1. Full fat milk - 1 litre
  2. Sugar - 1/ 4 cup
  3. Cardamom powder - 1/4 tsp
  4. Saffron strands (soaked in warm mil) - 6-7
  5. Dry fruits of own choice (almonds,cashews, pistachios, - 1/2 cup plus
  6. Chironji seeds - 1 tbsp
  7. Nutmeg powder - 2 pinches

Instructions

  1. In a heavy bottomed pan add full fat milk. Make sure milk should be full fat to get the perfect creamy texture .
  2. Add dry fruits and nutmeg powder and saffron strands.
  3. Allow it to boil. Then on a very low flame let it simmer.
  4. Keep stirring after 2-2 minutes.
  5. Keep scraping the sides and mix it with the milk again and again.
  6. There will be a creamy film on top . Mix it with the milk again and again. It will give the grainy texture at the end.
  7. Keep cooking till the milk is reduced to 1/3rd.
  8. Now add sugar , cardamom powder, and mix it well.
  9. And garnish it with all chopped dry fruits.
  10. And the bassundi is ready to serve .
