ABOUT Venpongal with kathirikai kozthu(brinjal ) RECIPE

The hot steaming venpongal with kathirikai kozthu , medu vada and a cup of coffee completes a yummy madras breakfast.

Ingredients Serving: 2

  1. Venpongal
  2. Raw rice 1 cup soaked
  3. Moong dal 1/4 cup soaked
  4. Cashew nuts 1 tbsp
  5. To Temper
  6. Curry leaves 1 sprig
  7. Asafoetida 1/4 Tsp
  8. Cumin seeds and pepper 2 tsp
  9. To grind
  10. Ginger 1/4 inch piece
  11. Green chilli 1
  12. Ghee /oil 4 tsp
  13. Water 3 cups
  14. Salt to taste
  15. U can grind cumin seeds and pepper

Instructions

  1. In a pressure cooker add oil/ghee , add the ingredients for tempering and grind. Saute nicely.
  2. Add three cups of water and salt allow to roll boil.
  3. Add rice and dal , close the cooker. Allow five whistles and steam to settle naturally.
  4. Serve hot with Brinjal kozthu and medu Vanda.
