ABOUT Mocha japonaise cake RECIPE

Always wanted to try this japonaise cake. The single bite of it evokes my childhood memories when monthly shopping to the market always ended with a bite of this elegant dessert. People from vellore would surely know this dessert. You simply can't eat just one.

Ingredients Serving: 2

  1. For the discs
  2. Egg Whites 3
  3. Powdered Sugar 1/4 cup
  4. 1/2 cup Ground almonds
  5. 1/3 cup Castor sugar
  6. 2 -3 tbsp Corn flour
  7. 1/4 cup Milk
  8. For the Mocha cream
  9. 1 tbsp Instant coffee granules
  10. 1/2 Cup Butter
  11. 1 cup Confectioners sugar
  12. Vanilla extract 1/2tsp
  13. To dust
  14. 1/4 cup Powdered almond
  15. 1/4 cup Confectioners sugar
  16. Garnish with
  17. Cherries

Instructions

  1. For the discs
  2. Separate the egg whites and yolks in two bowls.
  3. Beat the egg whites and castor sugar until soft peaks form.
  4. To this add milk, corn flour, powdered sugar and ground almonds and mix so that a meringue like batter is formed.
  5. Preheat the oven at 150 degree celcius .
  6. Dust a baking tray and pour this meringue batter with a spoon in your desired templates.
  7. Usually it is round but I used star shaped templates for the extra zing.
  8. Bake for 20 mins or until it turns golden in color.
  9. Allow it to cool down.
  10. For the mocha cream
  11. Beat the egg yolks, butter, coffee granules, confectioners sugar and vanilla extract in an ice bath.
  12. Keep the cream in the freezer for 1/2 hour.
  13. Assemble the cake.
  14. Take half the number of baked discs and spread the cream. Top it with the other discs.
  15. Dust the sides and top with powdered almond and confectioners sugar mixture.
  16. Garnish with cherries.
  17. Keep in the fridge until you serve.
  18. Your yummilicious mocha Japonaise cake is ready to eat.
