Eggs rubbed with salt and turmeric.
Heat oil in a pan and fry them.
Strain the eggs from the hot oil and keep aside.
Add half of the ghee in the oil.
Add whole garam masala, bay leaf and dry red chili and wait for a few seconds. Then add onion paste, cook for sometime until the onions look golden brown.
After that add ginger garlic paste and cook for 1 minute.
Add green chilli paste.
Add turmeric powder, salt and red chilli powder and mix properly.
Add tomato paste. Cook for 2/3 minutes until the oil separates from the mixture.
Add sugar as required.
Now add coconut milk, mix gently and add 1 cup of water and bring it to a boil.
And finally add the eggs to the gravy and cover the pan and cook for 5-6 minutes.
Add garam masala powder and remaining ghee.
Garnish with grated coconut.
Ready to serve.
