ABOUT Chettinadu Egg Roast RECIPE

Chettinad is known for it's spicy and aromatic cooking. This recipe of mine, tries to bring the chettinad flavours. It's pretty simple to prepare and goes well with any rice preparation or simply enjoy it as a starter.

Ingredients Serving: 2

  1. Hard boiled eggs 3
  2. Ginger garlic paste 1 tablespoon
  3. Turmeric powder 1 teaspoon
  4. Chilli powder 1 teaspoon
  5. Freshly ground black pepper 1 teaspoon
  6. Cumin powder 1 teaspoon
  7. Roasted fennel powder 1 teaspoon
  8. Coriander powder 1 tablespoon
  9. Salt as required
  10. Oil 3-4 tablespoons
  11. Coriander leaves chopped for garnish

Instructions

  1. Slice the hard boiled eggs into halves. Mix all the spice powders and ginger garlic paste along with little water to make a thick paste.
  2. Spread this paste on the yellow part of the egg and let it sit for 10 minutes.
  3. Heat oil in pan, roast the eggs, first, masala side down. Cook on low flame. Flip and roast for another 5 mins.
  4. Keep flipping till both sides are roasted well.
  5. Garnish with coriander leaves.
