ABOUT Okra Stir Fry RECIPE

A unique dish of Okra/Ladies Finger made in Coconut Oil. It has coconut as well, roasted peanuts and tempered lentils like Urad dal and chana dal and spices.

Ingredients Serving: 2

  1. Ladies finger 15-20
  2. Coconut oil 4 tsp
  3. Cumin seeds 1/4 tsp
  4. Urad dal 1 tsp
  5. Channa dal 1 tsp
  6. Green chilly 1 chopped
  7. Dry Red Chilly 2 break into 2-3 pieces
  8. Onion 1 large sliced
  9. Curry leaves 1 sprig
  10. Garlic 4 crushed
  11. Lemon juice 1 tsp
  12. Chilly powder 1 tsp
  13. Turmeric powder 1/4 tsp
  14. Coriander powder 1/4 tsp
  15. Coconut 4 tsp grated
  16. Peanut a handful roasted and skinned
  17. Salt to taste
  18. Coriander leaves for garnish

Instructions

  1. Wash the whole ladies finger (do not cut the edges now). Rub and pat them dry in clean kitchen towel.
  2. Cut off the edges and cut them into thin rings. Set aside.
  3. Heat oil in a pan.
  4. Add the cumin seeds, Urad dal, channa dal and saute till the dal turns golden.
  5. Add the garlic, curry leaves, onion and the chillies. Saute till onions turns soft.
  6. Now add the ladies finger, salt and the lemon juice, mix well.
  7. Cover the pan and fry till the stickiness of ladies finger goes away around 5 mins.
  8. Add the chilly powder, turmeric powder and coriander powder, mix well and fry further till the ladies finger is nicely cooked and soft approximately 5-10 mins.
  9. Once it is done, add the grated coconut and the roasted peanut.
  10. Fry for around 3-5 mins stirring continuously and take off the heat.
  11. Garnish with coriander leaves and serve.
