Dry karela with grated coconut

Ingredients Serving: 4

  1. Bitter gourd - 3
  2. Onion - 1 big
  3. Chillies - 3
  4. Mustard Seeds - 1/2 tsp
  5. Rice 10-15 grains
  6. Curry Leaves - 1 sprig
  7. Salt as per taste

Instructions

  1. In a frying pan, add 1 tsp oil. Add mustard seeds.
  2. When they start spluttering, add rice till the grains get fried.
  3. Add curry leaves and onion chopped finely.
  4. Stir once in a while till the onion gets browned.
  5. In the meantime, chop karela into very small pieces (I used the food processor). Remove the seeds.
  6. Add the chopped bitter gourd, 1 tbsp grated coconut, chillies and salt to the browned onions.
  7. Sprinkle a little water and cover with the lid.
  8. Add a little more water if you think it is sticking to the pan.
  9. Stir in between.
  10. Let it get cooked on low flame for the next 10 minutes.
  11. Turn off the flame, once it is completely dry and cooked.
  12. Your healthy and tasty pavakka thoran is ready. Serve hot with rice.
