Palakkadan sambar is very easy to make and is a must in any occasion. Hope you all like it.
Boil dal along with tomatoes till soft and mushy.
Separately boil vegetables till done.
Now let's make masala for sambaar.
In a pan heat oil and fry coconut till light golden brown.
Once brown add all the spice powders and salt ,saute till the mixture slightly leaves oil.
Switch off the gas and let the mixture cool completely
Grind this mixture into a fine paste.
Mix the pigeon pea and cooked vegetable together and add in the tamarind extract and let the mixture come to a boil.
Once it's boiled add the ground sambaar masala and let it further boil it for few more minutes.
Now heat oil in a pan and add mustard seeds and curry leaves.
Let it crackle and add it to sambaar.
Serve hot with steamed rice.
