ABOUT Idli Sambar RECIPE

Sambhar ,a hot and spicy lentil soup with mixed vegetables.My family loves south -Indian food.It's impossible to get idli rice here in hanoi,so i prepared rava idli with sambhar.Rava idli is quick to prepare.In this recipe I used homemade sambhar masala.Currently I am living in Vietnam-Hanoi.

Ingredients Serving: 4

  1. INGREDIENTS FOR PREPARING SAMBAR:-
  2. Arhar dal/Toor Dal 1/3 cup
  3. Chopped mix vegetables 1 cup
  4. Mustard Seeds/Rai 1Tsp
  5. Turmeric powder 1/2 tps
  6. Curry leaves 5-6 No.
  7. Hing 1/4 Tsp
  8. Onion finely chopped 1 medium size
  9. Sambar powder 1 Tbsp
  10. Tamarind seedless 1Tbsp
  11. Tomato finely chopped 1/3 cup
  12. salt to taste
  13. Water 1 cup+1 1/2cup
  14. INGREDIENTS FOR PREPARING RAVA IDLI
  15. Yogurt/Dahi 1cup
  16. Semolina/Sooji 2 cups
  17. Eno 1/4 tsp
  18. Oil 2-3 Tsp
  19. water as required
  20. salt as per taste

Instructions

  1. STEPS FOR PREPARING SAMBHAR:-
  2. Soak tamarind in 3 Tbsp of hot water for 10-15 minutes.
  3. Mash with spoon and strain it using sieve and discard the solid.
  4. Keep tamarind juice for later use.
  5. In a pressure cooker add toor dal,1 cup water chopped vegetables and tumeric powder.
  6. Pressure cook over medium heat for 3-4 whisltes.
  7. When pressure release completely open the lid and mash the dal using spatula.
  8. Heat oil in a pan over medium flame .
  9. Add mustard seeds,when they start to splutter add curry leaves,hing and saute for few seconds.
  10. Add chopped onions and cook until it turns translucent .
  11. Add tamarind juice and cook for 2-3 minutes.
  12. Add chopped tomatoes,saute until they turns soft .
  13. Add sambar powder,stir and cook for 1-2 minutes.
  14. Add cooked and mashed dal ,1 1/2 cup water and salt.
  15. Mix well and boil until it turns frothy,it will take around 5-7 minutes.
  16. Turn of the flame and garnish with coriander leaves.
  17. STEPS FOR PREPARING RAVA IDLI:-
  18. In a large pan dry roast rava for 5 minutes or till it turns aromatic.
  19. Allow it to cool down completely.
  20. Transfer roasted rava to a big bowl.
  21. Add curd ,salt and combine well avoiding any lumps.
  22. Allow to rest for 20 minutes.
  23. Now add water 1/4 cup or as required to prepare idli batter consistency.
  24. Make sure that the mixture should not too thick nor too thin.
  25. Heat water in a pressure cooker,let the water warm.
  26. Grease idli mold with oil and keep aside.
  27. Just before steaming add eno to the batter and give a gentle stir.
  28. Pour batter into greased moulds and place idli stand into pressure cooker.
  29. Cover pressure cooker with the lid ,but without the whislte.
  30. Steam for 10-12 minutes on medium heat .
  31. Open the lid and check whether the idli is cooked properly from inside.
  32. Insert a tooth pick/knife in centre of the lid,if it comes out clean,your idlis are ready.
  33. Remove the idli stand from cooker and let it cool down.
  34. Take out each idli from the idli mould with the help of spoon or knife.
  35. Soft,light and quick rava idli is ready.
  36. Serve with sambhar, coconut chutney or tomato chutney.
