ABOUT Chicken Afghani RECIPE

Rich famous chicken in white gravy, called Afghani, for its ingredients, look and taste. A rich and awesome dish with the goodness of Cashews, Poppy seeds and Almonds with special condiments and spices. My family's favourite for every EID UL ADHA (BAKRA EID). Do try, I am sure you will love this.

Ingredients Serving: 4

  1. 1 1/2 kg Chicken (Fresh) about 12-14 pieces curry cut
  2. 1/2 kg Yoghurt/ Curd
  3. 1/2 kg Onions
  4. 3-4 tbsp Ginger garlic paste
  5. 150 grams Cashews (Unsalted)
  6. 20 grams khuskhus or poppy seeds
  7. 100 grams blanched almonds
  8. 3-4 green chillies as per taste
  9. 1-2 piece cinnamon sticks
  10. 4-5 star anise
  11. 3-4 bay leaves
  12. Salt to taste
  13. 1-2 tsp white pepper
  14. 1 1/2 tsp garam masala powder
  15. 1 cup refined oil of choice

Instructions

  1. Wash and clean chicken pieces well.
  2. To the chicken apply the yoghurt, white pepper, salt, ginger garlic paste and keep aside.
  3. Grind to paste onions and green chillies. Keep aside.
  4. Now make a paste of the cashews, khuskhus (poppy seeds) and almonds with some water added and keep aside.
  5. Heat oil in a deep pot, add bay leaves, star anise and whole cinnamon 1 piece.
  6. On a low flame, add the onion paste and stir till it is translucent.
  7. Add in the cashew poppy seed and almond paste.
  8. Stir well for 5-10 minutes well on a low flame. As its simmering, add the marinade chicken and stir mix well.
  9. Check your gravy or curry as per requirement and add water to let the chicken cook well.
  10. Cook covered on a low flame till the chicken is done and the curry is snowy, not very thick or very thin.
  11. Sprinkle garam masala and simmer for 5 minutes.
  12. Serve hot.
